Mesquite gum, known in northern Mexico as chucata, is an exudate released by the mesquite tree in response to stress conditions such as extreme heat or lack of water.

This tree, which grows in arid and semi-arid regions, includes 44 species, 9 of which are found in Mexico, with juliflora being the most common. When the tree is damaged by insects or mechanical wounds, it secretes this gum, which ranges in color from light yellow to amber-red or dark brown.
Chucata, initially sticky in consistency, becomes more solid over time and can be used in the food industry as an emulsifier, a stabilizer in products like mayonnaise, sauces, and dressings, and as an encapsulating agent for citrus flavors.

This phenomenon, known as gummosis, typically occurs between May and July, with secretion lasting up to 16 weeks, depending on the tree's condition and species.
Chucata also has a sweet taste and is valued in some cultures for its flavor and texture.
