the best turkey ive ever had… 2 day process. soak in salt brine overnight. rub with fat of your choosing. cumin, chili powder, oregano uncovered, 30 minutes at max oven temp. take it out, put it in a baking bag. put it back in the oven. 12 hours at 175f cut open bag, pull it back. 20 minutes at max oven temp. skin is crispy, bones pull out with no effort, whole turkey breasts fall off in your hand.
