I purchased some honey for myself and a few friends from a friend of mine. His cousin produces it.
This friend of mine was telling me about the difference between honey made by real beekeepers and "industrial" honey, which you can find in supermarkets.
To put it simply, bees are given glucose syrup, which they mistake for nectar and process in the same way. This makes the honey less pure because it's easier and cheaper to produce. The only way to detect this scam is to analyze the pollen content of the honey. The more diluted the honey, the less concentrated the pollen, but this is hard to tell.
In short, the only way to be sure of the quality of what you are eating (and this applies to any food) is to KNOW YOUR PRODUCER!
